Royal Icing Decorative Lace
It’s a work of patience. Really! The advantage is it can be done way in advance. The Royal Icing Lace keeps in a tightly closed box (preferably metal) for ever.

5 tablespoons meringue powder
¾ cups of warm water
1 teaspoon cream of tartar (or few drops lemon juice)
1 kg (2 lbs 4 ounces) icing sugar, well sifted
In the bowl of a mixer, pour the warm water and add the meringue powder. Using a hand wisk only, mix 30 seconds or until frothy.
Add the cream of tartar or the lemon juice and wisk 10 more seconds to blend. Add all icing sugar at one and attach the bowl to the standing mixer. Using the paddle attachement and at the lowest speed possible, mix for 10 minutes to obtain a thick and creamy texture.
Pour the royal icing in a clean and dry bowl. Tap several times on the counter to bring the air bubbles up to the surface. Mix gently to pop the bubbles. Cover with a damp cloth (it shouldn’t touch the surface of the royal icing.) Allow to rest for at least 8 hours being carefull the cloth doesn’t dry out. This will bring up the rest of the bubbles. Mix gently to pop them.
Adjust the consistency of the royal icing by trying to pipe some on your design. If it spreads, add some confectioner sugar. If it’s too stiff to pipe, add a tiny bit of water at a time until it reaches the right consistency. At the beginning you will have to test the consistency of the royal icing but after you get the handg of it, you will “feel” when it is right witout trying to pipe it.
To pipe lace, I use a small decorative tip, the number 1 from Wilton.
Execute the laces as shown on the video on cooking paper (silicone paper). Do not use wax paper as the royal icing will be ruined by any tiny amount of fat it comes in contact with.

Allow to dry overnight before attempting to take off the paper. The laces are fragile, there will be breakage. It’s best to make more than needed.

Ce n'est pas un calque, c'est une feuille de papier cuisson (ou papier sulfurisé ou papier silicone, c'est pareil).
