I promised I would come back on Sunday evening or Monday. I failed to keep my word and I’m sorry about that. But when you’ll know why, maybe you’ll forgive me.
On Sunday afternoon, still in the plaster dust atmosphere, I called my friend. But her sister Nissa answered the phone with a bright and happy voice. She was excited to tell me she’s getting engaged officially on Saturday the 18th et then getting married the following Saturday (the 25th of February). Wow!!! That wedding was originally scheduled for next July. Unexpected family matters made the lovers decide on getting married in the next 2 weeks last Friday rather than having to wait 2007.
Nissa’s sister (my friend) organizes and hosts the engagement party and Nissa’s sister-in-law organizes and hosts the wedding reception. Both hostesses are working full time and were not able to take any days off due to the very short notice. Both are mothers of 3 young children and both are… expecting their 4th baby and are well in their 2 trimester of the pregnancy.
I decided I would help as much as I can. I’m not pregnant and I’m a stay-at-home. I have more time in my hands than they do. Besides both receptions are small, only 20 to 25 guests. We agreed with Nissa’s sister I’ll prepare most of the buffet food for the engagement party and I’ll make the wedding cake for the wedding reception the following week. Having scheduled things I can’t cancel, I won’t be able to attend the wedding and I regret I won’t see how the cake I’ll make will be received. Oh well… They’ll tell me.
I’ll try to keep you updated on my foodstuff preparation in the next 3 days. Notice I used the word “try” because I don’t really know how much time I’ll have to finish the buffet preps in time for Saturday morning. I’ll do my best. I probably won’t give you any recipe before next week when things will be less hectic and the panic will have settled.

Yesterday I figured out the menu, made a list of the things I need and this morning I went shopping. This afternoon I made Maple Walnut Fudge. These little candies (1.5 inches - 3 cm wide) need to air-dry for 48 hours. I don’t know yet how I’ll serve them. If you have suggestions, please feel free to leave me a comment.

Oh, that sounds like a lot of fun! And the fudge looks so beautiful as they are. But maybe you can decorate them with just a rose petal on top of each one?

I agree, these maple fudge hearts look absolutely beautiful, and Clivia's suggestion to use (candied?) sugar petals sounds great.
Actually, roses are edible! But maybe I´ll prefer organic ones for food decorations and where can you find organic roses? No idea...
